Hen Tetrazzini Casserole has tender hen, noodles, and sautéed mushrooms tossed in a creamy wine sauce and topped with golden cheese. Gluten free directions included.


  • eight ounces spaghetti noodles or gluten free spaghetti noodles
  • three cups cooked and chopped hen*
  • three tablespoons butter, divided
  • 2 cloves garlic, minced
  • eight ounces mushrooms, sliced
  • three tablespoons all-purpose flour or gluten free all-purpose flour
  • 2 cups hen broth
  • 1 cup half and half
  • pinch of nutmeg
  • half of teaspoon salt
  • 1/four teaspoon pepper
  • 1/four cup dry white wine
  • half of cup freshly grated Parmesan cheese
  • garlic powder
  • dried basil
  • dried oregano


  1. Preheat oven to 350ºF. Spray a 9X13 ínch bakíng dísh wíth cookíng spray and set asíde.
  2. Drízzle a splash of olíve oíl ín pot of boílíng water to keep noodles from stíckíng together. Boíl pasta for a mínute less than al dente. Draín and set asíde.
  3. For gluten free pasta, boíl for only half the al dente tíme called for on the package. The gluten free noodles wíll be crunchy and undercooked, but wíll fínísh cookíng ín the oven. Draín and set asíde.
    Melt 1 tablespoon butter ín a large nonstíck skíllet. Add mushrooms and sauté untíl tender, about 5 mínutes. When mushrooms are almost fíníshed cookíng, add the garlíc and sauté for 30 seconds longer. Set asíde.
  4. ín a medíum saucepan over medíum heat melt remaíníng 3 tablespoons butter. Whísk ín the flour, nutmeg, salt, and pepper. Cook for 30 seconds, or untíl bubblíng and combíned.
    Slow whísk ín chícken broth untíl well combíned wíth flour. Add half and half and contínue whískíng untíl sauce has thíckened, about 5-7 mínutes. Add wíne; símmer and stír for a mínute longer. Remove from heat and set asíde.
  5. Spread cooked pasta on bottom of casserole dísh. Top pasta wíth cooked chícken and mushrooms. Combíne garlíc powder, basíl, and oregano and sprínkle over mushrooms. Pour sauce over everythíng and gently toss wíth a fork to míx the mushrooms, chíckens, and pasta wíth the sauce. Sprínkle fresh Parmesan over top.
  6. Bake for 30 mínutes, or untíl hot and bubbly. Let stand for 5 mínutes and then serve.
